Why longhorns?
Taste —
Compared to other breeds, longhorn beef is leaner and contains less saturated fat — paired with a unique, and at times, gamey taste this beef sets itself apart.

Athleticism —
Longhorns are an athletic breed of cattle, many utilized to rope and compete in rodeo and ranch events. While this may seem like a deterrent, it is actually a contributing factor to the quality of meat that longhorns produce.
With frequent exercise in the past and a leaner diet longhorns do well when they arrive in our pens as their diet transitions and they are slowly increased to a finishing ration. We have found this lends to a desired finish and marbling.
Sustainability —
Meat quality and finish are at the forefront of what we look for in our beef; however, we are also proud to look at longhorn beef from a sustainability perspective as well.
Purchasing a retired animal is a sustainable way of ensuring these animals are properly utilized. While all retired animals will enter a feedlot at some point, we are proud to offer a finishing program that will allow the true value and taste of longhorns to shine through.

Compared to others in the business, our process for bringing in longhorn cattle allows for us to be constantly butchering and preparing animals and beef boxes. This means you don’t have to wait for seasonal availability to receive your beef!

Our entire process is tailored to ensure you are getting what you want, how you want it. This means when you purchase a whole animal, you are able to customize your cut sheet to suit what you eat most or allow you to try new cuts! We also work very closely with our butchers to ensure you are receiving the best cuts.
